Carolina Rascon is the From Now On Food Justice Coordinator with AFSC’s Appalachian Center for Equality program and project coordinator for Voices of Hunger WV. Carolina has a Regent Bachelor of Arts from West Virginia University. During her time as an undergraduate she experienced food insecurity, leading her to food justice work.
